How to perfectly prove dough with the Invoq Bake oven
Learn more about how HOUNÖ Invoq Bake oven combines baking and proving functions to deliver precise results for perfect dough every time.

What is a Prover?
If you’re running a professional kitchen or bakery, you know how crucial the proving process is to achieve the perfect texture and flavor in your baked goods. Traditional bakery provers are designed to create the ideal environment for yeast-based doughs to rise, by controlling both temperature and humidity. However, what if you could get this functionality right in your oven? With the Invoq Bake oven, you get the flexibility of a commercial oven combined with an advanced proving function, making it an efficient, space-saving alternative to standalone bakery provers.
A prover is an essential piece of equipment in commercial kitchens and bakeries. This cabinet-like device allows bakers to control the temperature and humidity levels, providing optimal conditions for dough to rise consistently. By creating a warm, moist environment, provers help dough to ferment evenly, developing the texture and volume needed for high-quality baked products.
The benefits of an Invoq Bake oven as a prover
When it comes to bakery provers, durability, precision, and ease of use are top priorities. However, the Invoq Bake oven goes a step further by offering proving functionality directly within the oven, eliminating the need for separate equipment. Here’s why the Invoq Bake is an exceptional choice for professional kitchens:
1. Precise temperature control
The Invoq Bake’s proving mode allows bakers to set specific temperatures tailored to different types of dough. Whether you’re working with loaves, rolls, or baguettes, the oven’s controls offer the consistency and accuracy needed for optimal results.
2. Space efficiency
For small bakeries or kitchens with limited space, having a combined bake oven and prover is a game-changer. With the Invoq Bake, you don’t need a separate prover, making it ideal for compact spaces.
3. Easy maintenance
4. Total fan control
The Invoq Bake is designed for straightforward operation and upkeep, making it simple for busy kitchens to maintain without interrupting workflows.
With Invoq Bake you also get total fan control, which allows you to prove very delicate doughs without breaking them.

Proving temperature:
The key to perfect dough
Temperature is one of the most important factors in achieving a successful proof. With the Invoq Bake oven, you can set the precise temperature and humidity needed to produce consistent results with every batch. You can set the temperature down to 30°C.
For example:
Low temperature setting
32°C for 45 minutes, ideal for larger loaves of 400–800 grams.
High temperature setting
36°C for 25 minutes, suitable for rolls and baguettes of 60–200 grams.
Additionally, you can control the fan speed (recommended at 30-50%) to ensure even distribution of heat without drying out the dough. This level of precision helps prevent under- or over-proving, guaranteeing a perfect rise every time. Exercise caution when proving pastries with a high butter content, as the butter may begin to melt at temperatures above 30°C.
How to use the Invoq Bake’s proving function
The Invoq Bake oven offers a straightforward proving mode, accessible right from the main menu. Here’s how it works:
- Go to the Main Menu, select Advanced, and then touch Proving.
- Adjust the proving settings by selecting the temperature and timer according to your dough’s requirements.
- For continuous proving, select the Cont. button, allowing the oven to maintain the set conditions for as long as needed.
With these features, the Invoq Bake makes it easy to achieve professional results without needing a dedicated prover.

Prove and bake in one oven
One of the standout features of the Invoq Bake oven is its ability to seamlessly transition from proving to baking. For example, you can start the process with proving, then increase the temperature for baking without needing to move the dough. This is a huge advantage in busy commercial kitchens, reducing preparation time and making it easy to go from proving to baking without delay.
The automized process removes the risk of collapsing products when moving a gently proved product from prover to oven. The Prove & Bake program also allows any operator to create perfectly proved and baked products every time.
This versatile solution is ideal for small-sized bakeries or kitchens that don’t have space for heavy equipment but still want professional-quality results. The Invoq Bake combines the functions of a prover and a commercial oven, providing flexibility and efficiency in one compact unit. This commercial oven ensures you have the precision and control needed for every batch.
