Head chef and owner Brad Carter is impressed with the versatility of the ovens, which enables him to use the ovens for many different cooking methods.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>Carters of Moseley is a fairly small restaurant with a capacity of just 30 seats.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>They are open for lunch and dinner Tuesday-Saturday and offers a different set menu each day; with a choice of four to six courses for lunch and six to eight courses for dinner.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>Carters of Moseley serves over 250 covers per week. Since it is a smaller restaurant, that is very close to full capacity.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>In order to easily cook for their patrons, the kitchen of Carters of Moseley is equipped with HOUN\u00d6 Visual Cooking SmartTouch\u00ae ovens in the sizes 1.06 and 1.10. Brad Carter says:<\/p>\n<\/div><\/div>\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><em>\u201cThe ovens are the workhorses of our kitchen and really help with productivity \u2013 it is like having another chef on the team.\u201d<\/em><\/p><\/blockquote>\n\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>The steam injection feature of the HOUN\u00d6 combi ovens is an asset to Carters of Moseley; it helps them deliver the perfect balance of moisture and texture for all food, from chicken to their speciality breads.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>Brad Carter is especially happy with the temperature range of HOUN\u00d6\u2019s combi ovens. He explains:<\/p>\n<\/div><\/div>\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><em>\u201cThe temperature range of the HOUN\u00d6 ovens is very useful. Unlike other ovens on the market, the HOUN\u00d6 allows a holding temperature of as low as 30\u00b0C, meaning that we can maintain optimum moisture and quality of pre-cooked food, prior to finishing and service.\u201d<\/em><\/p><\/blockquote>\n\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>Brad Carter was introduced to HOUN\u00d6 combi ovens by his kitchen designer, when they were setting up the kitchen of Carters of Moseley in 2010.<\/p>\n<\/div><\/div>\n\n<div class=\"wp-text-block page_container styled-text\"><div class=\"wp-text-block__inner\">\n<p>\u201cAt his suggestion, I did a trial cook on a HOUN\u00d6 combi oven and was impressed with the flexibility and control that it provided.
