Preparation for beef
- Remove from the oven and leave the rice to stand for 10 minutes.
- Put the heavy granite bowl and heat to 250°C, add a little sesame oil and rub carefully around the bowl with some kitchen roll. Pack the bowl with the cooked rice leaving 3 cm to the rim. Put back into the oven for 5 minutes to caramelise.
- Put the beef slices, carrots and Shitake into a 20 mm Imperial tray.
