Men n\u00e5r jeg bager br\u00f8d til Frankrig, skal det have en tynd skorpe, og s\u00e5 jeg bager ved 195\u2070C med 90% bl\u00e6serhastighed. De sidste \u00e5r bagte han ofte konditorprodukter ved ca. 180\u2070C for at opn\u00e5 en \u00f8nsket bruning og farveudvikling.
